Description
From a small Basque artisan producer, Lauburu Zyrax, this cheese is entirely hand made. Using only quality ewe’s milk, walnut flavouring is added to the milk prior to the curdling process and later walnut liquor is used to brush the rind. The maturing of the cheese is carefully monitored to obtain a supple creamy paste.
