Pico is a small soft ripened round of goat cheese, barely protected by a very thin rind. Produced in the Perigord region.Pico is sold young, and will develop as it ages into a more complex and pungent goat cheese.
Serve on a cheeseboard with grapes and pears and a glass of Sancerre or a fruity, yeasty Champagne.
