Description
Maroilles is semi-soft, washed rind cheese from the North of France called " Le Grand Nord" .After it was invented in the 10th century by a monk of the Abbey of Maroilles, it quickly grew to fame, and was noted as the preferred cheese os several French Kings ( Philipp II, Louis IX, Charles IV and Francois 1st ).
Traditionally the farmers in the villages surrounding the Abbey were asked to convert their cow's milk into young squares of Maroilles cheese which were distributed on the following 1st of October to the Champagne grape harversters. October 1st is sill knowm as Maroilles day in the region.
Maroilles is charesterised by a pungent smell but the the taste is soft and creamy when ripe, with a slight sweetness and lingering flavour. It is a great end-of - meal cheese. It goes with brown ale , a French cider, a refined brandy or an aromatic white such as late harvest Gewurztraminer
