Named after the Cantal mountains in the Auvergne ,Cantal has been produced in the tradition of Laguiole cheeses dating back to the 11th century Also in this group is the Salers. All 3 require up to 400 litres of cow's milk to produce each 40kg wheel. Cantal is a well salted hard cheese with a rich, dense matured flavour after 6 months ageing .Younger Cantal is smoother and sweeter ( Rind should not be eaten).
Laguiole is one of France’s most traditional cheeses, protected under the French Appellation d'Origine Contrôlée (AOC) since 1961. This cheese is made exclusively from raw, unpasteurized French Simmental or Aubrac cow's milk collected between May and October above 800m altitude.
