The 36 months old Comté‚ is an unpasteurized cow's milk cheese made from the milk of pasture-fed cows. The Comté requires a long maturing period. This period gives its distinctive crispiness (salt crystals) and softness to the cheese.
Comte pairs well with yellow wine from the Jura region.
