Description
Named after Livarot village in Normandy and protected by AOC since 1975, Livarot is a very strong smelling cheese. It is one of the world's great eating cheeses with a smooth, ripe, slightly spicy flavour. Its rind is encircled with straps of paper that prevent the cheese from collapsing during maturing. The straps are reminiscent of army colonel's ranking stripes, giving the cheese its nickname ‘The Colonel’.
Try Livarot with crusty bread and a fresh Normandy Cider or a full-bodied red wine.
